Dhirda (whole wheat cake from leftover milk solids)

So many people ask what to do with the leftover milk solids after making ghee from butter. Here is a yummy recipe that my aaji (grandmother) used to make and then my mom. We used to call it "aaji ka cake." I guess the only way we would eat it, is when we were told it was cake.

So now that you have made ghee from butter, you have these brown milk solids left AND some ghee stuck in the pan, which more often than not gets wasted.




Take little gur / jaggery as per taste and mix / dissolve it in warm water.




Add whole wheat flour and a pinch of salt and mix well to create thick pancake batter like consistency.




Pour it over the milk solids (same pan in which you made ghee.)


Cover and cook on low to medium flame.



It takes about 20 minutes or more depending on the amount of batter inside. You can keep checking to see if it is done. Poke it with a knife or a toothpick and if it comes out clean that means it's done. Turn off the gas and set aside to cool a little bit.

The bottom part of the cake will look burnt, don't worry about that, it tastes great!




Cut slices and enjoy warm or cold!
