Nachni / Ragi roti and Doodhi sabji lunch for my toothless 10 month old.
Nachni / Ragi roti
mix equal portions ragi flour and whole wheat flour with water into a pancake batter consistency.
Spread onto an iron pan (cooking in iron vessels has it's own benefits.)
cook till done, spread ghee / clarified butter while warm.
Doodhi sabji
Heat a little ghee.
Add just a little jeera / cumin.
Add grated doodhi and cook till done.
Serve warm, break teeny tiny pieces of roti and feed the baby.
Ingredients
1 cup whole milk
1/4 cup water
3 tbsp nachni / ragi powder
2 tbsp ground flax seeds (I think you can opt out of this, but it's a great binding agent)
2 tbsp sugar
2 tbsp baking/cooking chocolate chips (for the richer chocolate flavor)
1 tbsp cocoa powder
Handful of walnuts cut into small pieces (or any other nuts of your choice)
Method
- Take the nachni powder in a cooking pan.
- Add flax seed powder, sugar, chocolate chips.
- Add milk and water and mix to remove lumps.
- Cook this on medium to low heat for about 7 minutes or till the mixture is cooked and is of the right consistency. (Nachni tends to thicken after cooling.)
- Pour in fancy glasses while hot.
- Set in fridge.
- Before serving add some whipped cream and a walnut on top.
